Buccatini Pasta with Summer Fresh Roasted Red Pepper Dip

Roasted Red Pepper Dip

Extra Virgin Olive Oil
Zucchini (cut in ½ moon circles)
Kalamata Olives sliced
Roasted Red Pepper (skinned, seeds removed, cut in strips)
Buccatini pasta, cooked
vegetable stock or water

1. Heat a sauté pan to medium heat, add the olive oil and zucchini. Cook until zucchini is done (about 2-3 mins).

2. Add kalamata olives and roasted red peppers, pasta and vegetable stock. Cook for 3 minutess until pasta is hot.

3. Add the Summer Fresh Roasted Red Pepper dip heat for 3 minutes stirring constantly then serve.

Serves 2. Enjoy!

Grilled Chicken Sandwich with Garlic Hummus

Roasted Garlic Hummus

2 2 1 x 8 oz ½ cup ½ cup 1 cup 6 oz chicken breasts ciabatta buns Summer Fresh Roasted Garlic Hummus asiago cheese, shredded roasted red pepper mixed greens 2 2 227 g 125 mL 125 mL 250 mL
1. Grill chicken breasts until fully cooked. 2. Slice foccacia bread in half; toast or grill each side. Spread each half with Summer Fresh Roasted Garlic Hummus. 3. Place chicken on bread and top with asiago cheese, roasted red peppers, and mixed greens. Serves 2. Enjoy!

Artichoke & Asiago Naan Pizza

Artichoke & Asiago Dip

Italian-style cheese, (parmesan, romano), shredded
baby spinach leaves
Kalamata olives, sliced
artichoke hearts, chopped
feta cheese, crumbled
red pepper, sliced

1. Place Naan on baking tray, and spread 4 tbsp (60 mL) Summer Fresh Artichoke & Asiago dip on top.

2. Sprinkle 1cup (250 mL) of Italian cheese on top then layer 1 cup (250 mL) of spinach on top.

3. Garnish with olives, artichokes, feta cheese and red peppers.

4. Bake in 350º F (180° C) oven for 10 to 12 minutes or until golden brown and bubbly. Cool for several minutes and serve.

Serves 2 as main course, or 10 to 12 as small appetizers. Enjoy!
