Ingredients

Summer Fresh Roasted Garlic Hummus
2 cups, shredded purple cabbage
2 cups, shredded green cabbage
1/2 purple onion, thinly sliced
1 carrot carrot, julienned
½ bunch, parsley chopped
1/4 cup fresh lemon juice
2 tablespoon, Olive Oil
1 teaspoon salt

Directions

Shred Cabbage, slice onion and julienne carrot and place s in a large bowl. Sprinkle with salt and mix well. Set aside for 45 minutes to allow vegetables to slightly soften and let out excess water.⁣ ⁣

In a separate bowl, whisk together lemon juice, hummus, and EVOO and set aside. After vegetables have softened, drain water from bowl.⁣ Drizzle hummus dressing over the mixture and toss well. Garnish with freshly chopped Parsley.⁣
