Ingredients
Summer Fresh Roasted Garlic Hummus
2 cups, shredded purple cabbage
2 cups, shredded green cabbage
1/2 purple onion, thinly sliced
1 carrot carrot, julienned
½ bunch, parsley chopped
1/4 cup fresh lemon juice
2 tablespoon, Olive Oil
1 teaspoon salt
Directions
Shred Cabbage, slice onion and julienne carrot and place s in a large bowl. Sprinkle with salt and mix well. Set aside for 45 minutes to allow vegetables to slightly soften and let out excess water.
In a separate bowl, whisk together lemon juice, hummus, and EVOO and set aside. After vegetables have softened, drain water from bowl. Drizzle hummus dressing over the mixture and toss well. Garnish with freshly chopped Parsley.
