Ingredients
- Summer Fresh Roasted Red Pepper Hummus
- Mini Naan Breads
- 1/4 cup Mint – chopped
- 1/4 cup fresh Parsley – chopped
- 1/4 cup Pomegranate seeds
- 1/3 cup toasted Pine Nuts
- 1/3 cup sliced Mini Cucumber Rounds
Directions
To prepare mini naan rounds:
- Arrange mini naan rounds on a baking sheet lightly sprayed with cooking spray.
- In a 350°F (176°C) oven bake mini naan rounds for 8-10 minutes, or until toasted.
- Remove from oven and arrange on a serving platter to be topped.
Spread Summer Fresh Roasted Red Pepper Hummus on each mini naan round, and top with toasted pine nuts, sliced cucumber rounds, pomegranate seeds and a touch of parsley and mint. Enjoy!
