A&A Vegetable Gratin

Ingredients

  • 1x 227g Summer Fresh Artichoke & Asiago Dip
  • 1 large crown of broccoli, cut
  • 1 green zucchini
  • 1 yellow zucchini
  • 2 Tbsp olive oil
  • 1/3 cup mozzarella, shredded
  • 4 Tbsp bread crumbs

Directions

  1. Combine vegetables in a large mixing bowl. Add olive oil and toss.Bake vegetables on a baking sheet in a 375ºF (190ºC) oven until vegetables are slightly soft, and brown around the edges. Remove from oven and allow to cool.
  2. Pour Artichoke & Asiago Dip over vegetables and mix. Sprinkle cheese and breadcrumbs over top of vegetables, and return to oven, baking until crusty. Remove and serve. Serves 4. Enjoy!
