Tuscan Chickpea and Grilled Halloumi Salad

Ingredients

  • 800g Summer Fresh Tuscan Chickpea Salad
  • NEW* Summer Fresh Almond Turmeric Dressing
  • Red onion 1, halved and sliced
  • 1 cup cherry tomatoes
  • 2 cups cooked brown lentils
  • ½ lemon, juiced
  • Halloumi 1 block, cut into ½ inch slices
  • Mint a small bunch, chopped into small pieces
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup sliced almonds

Directions

  1. Heat the olive oil in a pan and cook the onion until soft. Stir in the tomatoes and cook until soft. Stir in lentils and lemon juice, cook for a minute then season well and cool
  2. Grill halloumi slices in batches on medium heat grill until lighted grilled on both sides
  3. In a large mixing bowl, toss half Summer Fresh Tuscan Chickpeas Salad and 1/2 the herbs into the lentil mixture
  4. Put on a large serving platter and top with Summer Fresh Almond Turmeric Dressing, halloumi, remaining herbs and sliced almonds and enjoy
