Ingredients

1 x 227g Summer Fresh® Spinach Dip
3 lbs Gourmet Mushroom Mix
1 bunch of Baby Spinach or Swiss Chard
1 Spanish Onion, sliced
Toasted Sunflower Seeds
Olive Oil

Directions

  1. Drizzle mushrooms with 1 tbsp of olive oil and roast in oven at 400°F for about 12 mins or until golden brown. Sauté spinach or swiss chard with 1 tbsp olive oil until slightly wilted. Sauté onions with remaining olive oil on high heat until golden brown.
  2. Spread Summer Fresh® Spinach Dip on plate, top with sautéed spinach or swiss chard, place sautéed onions on top of the greens, arrange the mushrooms on top and then garnish with the toasted sunflower seeds.
