Combine vegetables in a large mixing bowl. Add olive oil and toss.Bake vegetables on a baking sheet in a 375ºF (190ºC) oven until vegetables are slightly soft, and brown around the edges. Remove from oven and allow to cool.
Pour Artichoke & Asiago Dip over vegetables and mix. Sprinkle cheese and breadcrumbs over top of vegetables, and return to oven, baking until crusty. Remove and serve. Serves 4. Enjoy!
