Goat Cheese Stuffed Mushrooms

Ingredients

227g Summer Fresh Artichoke & Asiago Dip
15oz of button mushrooms, stems removed
5oz goat cheese
3oz cream cheese, softened
1/2 tbsp of fresh parsley, chopped
1 tbsp green onion, sliced
1/4 cup of panko
2 tbsp of olive oil
2 tbsp of balsamic vinegar

Directions

1.Preheat oven to 350°F. Clean mushrooms with damp wet towelette and remove stems.

2.Toast panko in a hot pan with a splash of olive oil. Continue until panko is toasted to golden brown. Remove panko from the pan and into small bowl to let cool.

3.Combine goat cheese, whipped cream cheese, Summer Fresh Artichoke & Asiago, green onions, and parsley. Mix well.

4.Spoon together the mixture into each mushroom and bake in oven for 15-20 min or until mushrooms are tender. Garnish with the toasted panko & balsamic vinegar. Enjoy!
