Ingredients
- 1 x 227g / 8oz Summer Fresh Caramelized Onion Hummus
- 1 x 227g / 8oz Summer Fresh Roasted Red Pepper Hummus
- 1 Zucchini
- 2 cups / 680g of bread crumbs
- 1/3 cup / 114g Italian seasoning
- 2 tsp / 10 mL corn starch
- Salt & Pepper to taste
Directions
- Cut zucchini into ¼ inch-thick slices, and season with salt & pepper to taste. Let sit for 10 minutes, then pat with paper towel to absorb excess moisture.
- In a medium bowl mix 2 tbsp Summer Fresh Caramelized Onion Hummus, 1 tbsp water, and 2 tsp corn starch to make a batter.
- In a small bowl, combine 2 cups of bread crumbs, and 1/3 cup of Italian seasoning.
- Dip each zucchini slice into caramelized onion batter, then press each side into bread crumb mix. Lay out coated slices on a baking sheet lined with parchment paper.
- Bake in a 425°F (218°C) oven for about 5 minutes or until golden brown. Remove and serve in rolled paper “cups” with Summer Fresh Roasted Red Pepper Hummus for dipping.
