Ingredients
1 x 227g (8 oz) Summer Fresh Spicy Hummus
1 x 227g (8 oz) Summer Fresh Roasted Red Pepper Dip
6 Boiled eggs, cooled and peeled
Salt and Pepper to taste
2 Tsp Paprika
2 Tbsp Fresh chives, chopped
Directions
1. Cut eggs down the middle length-wise and scoop egg yolks into a clean bowl. Mix egg yolks, ½ Cup of Summer Fresh Spicy Hummus, salt and pepper together until smooth and creamy. Transfer mixture to a piping bag or sandwich bag with the corner snipped off.
2. Place egg halves on a serving platter, hole-side up, and with a fine mesh strainer, or your fingers, add a dusting of paprika across the top of each egg.
3. Pipe an equal amount of the filling mixture into each egg. Top each egg with a drizzle of Summer Fresh Roasted Red Pepper Dip and garnish with chives.
