Summer Fresh Bruschetta
Summer Fresh Artichoke & Asiago Dip
300g Summer Fresh Chickpea & Edamame Salad
4 Boneless skinless chicken breasts
4 Slices mozzarella
2 Avocados, diced
1/3 Cup fresh chopped basil
Salt and pepper, to taste
Directions
Coat chicken breast with Artichoke & Asiago Dip and marinate for 30 minutes. While Chicken is Marinating, in a small bowl mix together the avocado and bruschetta and set side. Heat the grill to medium-high heat. Grill the chicken, grilling evenly on each side until cooked throughout and no longer pink. Take Chicken off the grill and immediately top with cheese and avocado & Bruschetta mixture. Garnish with freshly chopped Basil and serve. Enjoy alone or pair with a side like our NEW Chickpea & Edamame Salad for a complete meal.
