Ingredients

  • Summer Fresh Roasted Red Pepper Hummus
  • Mini Naan Breads
  • 1/4 cup Mint – chopped
  • 1/4 cup fresh Parsley – chopped
  • 1/4 cup Pomegranate seeds
  • 1/3 cup toasted Pine Nuts
  • 1/3 cup sliced Mini Cucumber Rounds

Directions

To prepare mini naan rounds:

  1. Arrange mini naan rounds on a baking sheet lightly sprayed with cooking spray.
  2. In a 350°F (176°C) oven bake mini naan rounds for 8-10 minutes, or until toasted.
  3. Remove from oven and arrange on a serving platter to be topped.

Spread Summer Fresh Roasted Red Pepper Hummus on each mini naan round, and top with toasted pine nuts, sliced cucumber rounds, pomegranate seeds and a touch of parsley and mint. Enjoy!
