Salmon Topping:
1 lb of salmon sashimi, finely diced
1/4 cup green onion, thinly sliced
1 tsp sesame oil
1 tbsp soy sauce
227g Summer Fresh Roasted Red Pepper Dip
1 tsp sriracha sauce
2 cups of canola oil
1 tsp black and white sesame seeds

Fried Rice Cake:
3 cups of arborio rice, cooked & cooled
2 tbsp soy sauce
1 tsp sesame oil
3 eggs beaten
1 cup of flour
2 cups of panko breadcrumbs
1/4 cup green onion, thinly sliced for garnish

 

Directions

1.Chop salmon into small pieces. Mix in a bowl with green onions, sesame oil, soy sauce, Summer Fresh Roasted Red Pepper Dip, and sriracha. Let sit in fridge.

2.Line a baking tray with parchment paper and set aside.

3.Place cooled Arborio rice in a bowl. Season with soy sauce and sesame oil.

4.Take a ¼ cup of rice and form into balls. Flatten the balls and roll into medium sized patties. With a spatula, place patties onto parchment lined baking sheet. Place into freezer for 20 minutes.

5.Place flour, egg, and panko into three separate bowls. Remove patties from freezer and begin breading process. First into flour, then egg mixture, then panko. Repeat for all patties.

6.Preheat oil on stove to 350˚F in a Dutch oven or thick based pot.
Fry the breaded patties in the oil until golden brown. Remove the patties and let dry on a baking sheet.

7.Place salmon onto patties and garnish with green onion and sesame seeds.
