Ingredients
- 1 x 283g / 10oz Summer Fresh Spicy Chili Pepper Humus
- 1 fresh French baguette, thinly sliced
- ½ cup / 170g shredded mozzarella or slices
- 4 tbsp / 56g butter
- 5 oz / 140g button mushrooms, sliced
- 1/4 cup/ 56g caramelized onions
- 1 bunch baby arugula
- 1 bunch fresh basil
- Cracked black pepper and sea salt, to taste
Directions
- In a frying pan, sauté thinly sliced button mushroom with 1 Tbsp butter on med-high heat.
- Spread Summer Fresh Spicy Chili Pepper Hummus on one side of each baguette slice. Top with button mushrooms, caramelized onion, mozzarella, arugula, fresh basil, and salt and pepper to taste. Cover with another slice of baguette.
- In a frying pan, melt 2-3 Tbsp of butter. Carefully add sandwiches in batches on med-low heat.
- Cook each side for about 2-3 minutes until golden brown, and the cheese begins to melt.
- Remove and serve with extra hummus, or Summer Fresh Roasted Red Pepper Dip, for dipping.
