Ingredients
- 800g Summer Fresh Couscous Salad
- NEW* Summer Fresh Avocado Herb Goddess Dressing
- 3 large portobello mushrooms
- 8 ounce steak
- 1 corn, sliced
- 1 pint heirloom tomatoes, halved
- 1 avocado, cubed
- Handful cilantro- chopped
- 1 cup arugula
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons soy sauce
Directions
- Preheat grill to medium-high heat . Mix olive oil, soy and balsamic in a bowl and brush onto portobello mushrooms
- Prepare to grill steaks, salt and pepper on both sides
- Place the portobello mushrooms (gills up), steak and corn on the grill. Cover and let all cook 5 minutes. Flip mushrooms and bast with mixture and remove steak (once cooked to preferred doneness,) corn and mushrooms once charred and place on cutting board.
- Thinly slice steak and portobello mushrooms and slice corn off the cob
- On a large platter, lay down 2 cups of Summer Fresh Couscous Salad, 1 cup arugula, grilled corn, cubed avocado, steak and portobello mushrooms, tomatoes, cilantro and drizzle with Summer Fresh Avocado Herb Goddess Dressing
