Ingredients
- 800g Summer Fresh Tuscan Chickpea Salad
- NEW* Summer Fresh Almond Turmeric Dressing
- Red onion 1, halved and sliced
- 1 cup cherry tomatoes
- 2 cups cooked brown lentils
- ½ lemon, juiced
- Halloumi 1 block, cut into ½ inch slices
- Mint a small bunch, chopped into small pieces
- 1/4 cup fresh parsley, chopped
- 1/3 cup sliced almonds
Directions
- Heat the olive oil in a pan and cook the onion until soft. Stir in the tomatoes and cook until soft. Stir in lentils and lemon juice, cook for a minute then season well and cool
- Grill halloumi slices in batches on medium heat grill until lighted grilled on both sides
- In a large mixing bowl, toss half Summer Fresh Tuscan Chickpeas Salad and 1/2 the herbs into the lentil mixture
- Put on a large serving platter and top with Summer Fresh Almond Turmeric Dressing, halloumi, remaining herbs and sliced almonds and enjoy
