The warmer weather is finally upon us and what better way to celebrate than taking your next meal outside for a family picnic!  Susan shared her favourite picnic recipes at her last visit to CHCH TV in Hamilton and we want to share them with you. These deliciously simple dishes are easy to make and will taste even better in the great outdoors. So pack up your table cloth, some beverages and your favourite Summer Fresh products and get outside to enjoy this beautiful weather.

 

 

 

 

 

 

TUSCAN CHICKPEA TUNA SALAD

  • 800g Summer Fresh Tuscan Chickpea Salad
  • 2 large cans of tuna, in water, drained.
  • 1 cucumber, sliced
  • 1 pint of cherry tomatoes, cut in half
  • 1 medium red onion, sliced

Empty Summer Fresh Tuscan Chickpea Salad into large bowl, add tuna, cucumber, cherry tomatoes and red onion and mix until evenly tossed. Top salad with extra sliced cucumber, tomatoes and onion for colour.

Enjoy!

ROASTED GARLIC HUMMUS RAINBOW BAGUETTE

This idea is super simple and you can use any vegetables you have available in your fridge. For a beautiful presentation you can showcase this sandwich open faced before enjoying.  For this recipe, first slice the baguette lengthwise and generously spread Summer Fresh Roasted Garlic Hummus onto half of the baguette and top with colourful veg such as beetroot, red & yellow pepper, carrot, micro greens and don’t forget the fresh basil! Drizzle with Summer Fresh Roasted Red Pepper dip, a bit of pesto and enjoy!
