It’s been a long, productive day, and you’ve just finished a great workout at the gym. Time to feed those muscles with something nutritious and delicious. Why not whip up a quick buddha bowl using last night’s chicken leftovers?
A hummus vinaigrette can be incorporated into your buddha bowl, adding numerous health benefits. With so many great Summer Fresh Hummus flavours to choose from, there are so many possibilities, so grab your favourite flavour and create a protein-packed and low-fat dressing.
Hummus Dressing:
• 1/2 cup of your favourite Summer Fresh Hummus
• 1/4 cup lime juice
• 2 tbsp olive oil
• 1 tablespoon maple syrup (optional for added sweetness)
• Salt and pepper to taste
Combine the ingredients in a small bowl and whisk until smooth. Or pop them into a blender, and pulse until combined.
Chicken Quinoa Base:
Quinoa is the perfect base as it’s gluten-free, very high in protein and essential amino acids your body craves, especially post workout. It is also high in important minerals such as iron and magnesium. Avocados add healthy fats to your diet, and hummus adds beneficial fibre which can aid in better digestive health.
- 1 (115g) Snack’n Go Five Bean Salad
• 1 cup cooked quinoa
• 4 tablespoons chopped cilantro, divided
• 2 cups grape tomatoes, halved
• 2 large avocados, sliced
• Grilled chicken cut into cubes
Divide the cooked quinoa, Summer Fresh Snack’n Go Five Bean Salad, tomatoes, avocado, and chicken into bowl. Sprinkle with remaining cilantro then drizzle the hummus dressing over the top. Serve with an additional dollop of hummus on top. Enjoy!
