Ingredients
- 227g Summer Fresh Baba Ghanouj
- 12 mini potatoes
- Small container of black olives
- 1 large Red Onion, cut into 1-inch pieces
- 300g Feta Cheese
- 1 jar artichoke hearts, cut in half
- Six wood skewers
Directions
1. Preheat the oven to 450°F.
2. Mix potatoes with the olive oil, salt and pepper and cook until tender, about 30 minutes. Let the potatoes rest until cool enough to handle.
3. Take wood skewer and skewer artichoke heart, potato, red onion, potato, feta cheese and a black olive.
4. Place skewers on platter and drizzle with Summer Fresh Baba Ghanouj and fresh cracked black pepper and serve with extra Baba Ghanouj for dipping.
