Caramelized Onion and Horseradish Beef Crostini

Ingredients

255g Summer Fresh Caramelized Onion Hummus
1 French baguette, sliced into 1/2-inch-wide slices
2 yellow onions, thinly sliced
8 oz Swiss cheese, sliced
2 lbs roast beef, thinly sliced
4 oz creamy horse radish
4 tbsp olive oil
Basil, thinly sliced as garnish

Directions

1. Heat 2 tbsp of olive oil in a sauté pan over medium to low heat. Add sliced onions and cook low and slow for 30-40 minutes until the onions have a nice golden-brown color. Stir onions every 5 minutes (turn your stove down if they begin to or get crispy). You can also add a tbsp of water at a time if the pan gets too dry

2. Preheat your oven to 400°F.

3.Slice the baguette into ½ inch wide slices. Lay the slices flat on an oiled cookie sheet. Brush the top of each crostini with olive oil. Cook for 5 minutes.

4.Remove the crostini from the oven & let cool. Cut the Swiss cheese slices in half to fit on the crostini. Lay one piece of cheese on each crostini and put them back in the oven for 5 minutes or until the cheese has melted. Remove crostini from the oven and let cool.

5.Spread Summer Fresh hummus evenly across the crostini and place a piece of sliced roast beef on top. Add a small amount of the creamy horseradish on top of the roast beef. Using a fork, place 1/4 tsp of caramelized onions (from hummus) on top. Finish with basil.
