Ingredients
- 1 x 227g / 8oz Summer Fresh Caramelized Onion Hummus
- 1 x 227g / 8oz Summer Fresh Tzatziki
- 1 lb / 454g large Brussels sprouts, halved
- 5 Tbsp / 70ml olive oil
- 1 Tbsp / 14g butter
- ¼ lb / 114g halloumi cheese
- 2 large, yellow peppers, cleaned, seeded, and halved
- ¼ lb / 114g smoked prosciutto, sliced
- Salt and Pepper to taste
Directions
- In a large bowl, mix halved Brussels sprouts with 3 Tbsp olive oil, and salt & pepper to taste.
- In a 400°F (204°C) oven, roast yellow peppers about 25 minutes until wrinkled, and black char appears. At the same time, roast Brussels sprouts for about 30-40 mins until crispy outside and tender inside. Remove and allow to cool.
- Cut the yellow pepper into 1 inch squares, and coat with Summer Fresh Caramelized Onion Hummus.
- Cut halloumi cheese into ¼ inch thick slices by 1 inch square. In a frying pan on medium-high heat, add 2 Tbsp olive oil, and carefully fry both sides of each halloumi slice until golden brown.
- On a bamboo skewer, add one Brussels sprouts half, followed by a halloumi cheese slice, a square of roasted yellow pepper, and a piece of smoked prosciutto, capped with another Brussels sprouts half.
- Serve with Summer Fresh Tzatziki for dipping.
