Ingredients

  • 1 x 227g / 8oz Summer Fresh Caramelized Onion Hummus
  • 1 x 227g / 8oz Summer Fresh Roasted Red Pepper Hummus
  • 1 Zucchini
  • 2 cups / 680g of bread crumbs
  • 1/3 cup / 114g Italian seasoning
  • 2 tsp / 10 mL corn starch
  • Salt & Pepper to taste

Directions

  1. Cut zucchini into ¼ inch-thick slices, and season with salt & pepper to taste. Let sit for 10 minutes, then pat with paper towel to absorb excess moisture.
  2. In a medium bowl mix 2 tbsp Summer Fresh Caramelized Onion Hummus, 1 tbsp water, and 2 tsp corn starch to make a batter.
  3. In a small bowl, combine 2 cups of bread crumbs, and 1/3 cup of Italian seasoning.
  4. Dip each zucchini slice into caramelized onion batter, then press each side into bread crumb mix. Lay out coated slices on a baking sheet lined with parchment paper.
  5. Bake in a 425°F (218°C) oven for about 5 minutes or until golden brown. Remove and serve in rolled paper “cups” with Summer Fresh Roasted Red Pepper Hummus for dipping.
