Ingredients
1 x 227g Summer Fresh® Artichoke & Asiago Dip
2 lbs Mini Potatoes
1/4 cup Olive Oil
2 tbsp Mozzarella Cheese
2 tbsp Parmesan
Chives or Parsley, for garnish
Directions
- Boil the potatoes until soft and tender and drain well. Place in a large skillet in a single layer, using a large fork or bottom of a cup, squish them slightly, still keeping them in one piece.
- Drizzle with olive oil & bake at 400°F for 12 mins, flip and bake for another 10 mins. Remove from oven and top with Summer Fresh® Artichoke & Asiago Dip and cheese. Broil until cheese is browned, garnish with fresh chives or parsley.
