Falafel Buddha Bowl

Ingredients

• Summer Fresh Roasted Garlic Hummus
• 3-4 Falafel (frozen or fresh)
• 1-2 cups of mixed greens, spinach or kale
• cucumber cut into cubes
• diced red onion
• roasted chickpeas
• diced fresh tomatoes
• pickled red cabbage or turnips
• garlic naan or pita bread
• chopped fresh parsley

Directions

1. Preheat oven to 400 degrees Fahrenheit
2. Open can of chickpeas draining all liquid and thoroughly rinsing
3. Pat chickpeas dry with a paper towel
4. Combine spices in a separate bowl
5. Coat dry chickpeas with olive oil, salt and pepper and lay evenly onto a prepared baking sheet lined with parchment paper
6. Roast chickpeas for roughly ten minutes and remove from the oven. Combine with spices and return to the oven to roast for an additional 20-25 minutes shaking the pan half way through. Chickpeas should be golden brown on the outside and soft in the middle once done.
7. While chickpeas are roasting cook your falafel per package instructions
8. Once chickpeas are roasted pre heat your grill to low and warm your garlic nan or pita bread for roughly 1 minute per side.

To assemble your bowl, begin with mixed greens topping with diced cucumber, tomatoes, red onion, roasted chickpeas, pickled cabbage (or turnips) falafel, grilled nan bread, Summer Fresh Roasted Garlic Hummus and garnish with fresh parsley
