Loaded Baba Ghanouj and Halloumi Flatbreads

Ingredients

  • Summer Fresh Baba Ghanouj
  • Summer Fresh Roasted Garlic Hummus
  • 1 block Halloumi cheese, cut into slices
  • 2 large flatbreads or wraps
  • 1/2 small red cabbage, shredded
  • 2 carrots, shredded
  • 1 small red onion, sliced
  • ¼ cup fresh cilantro, chopped
  • Juice from ½ lemon

Directions

  1. In a bowl, mix together Cabbage, carrots, onion, cilantro, lemon juice and 1/2 cup hummus in a bowl. Set aside.  Grill the halloumi in a skillet over a medium heat for 2–3 minutes each side until golden brown and crispy on the outside but soft on the inside.
  2. Warm the flatbreads in the oven and spread a generous amount of Baba Ghanouj all over the flatbread. Top with crunchy hummus salad and halloumi  and enjoy!
