Ingredients
- Summer Fresh Baba Ghanouj
- Summer Fresh Roasted Garlic Hummus
- 1 block Halloumi cheese, cut into slices
- 2 large flatbreads or wraps
- 1/2 small red cabbage, shredded
- 2 carrots, shredded
- 1 small red onion, sliced
- ¼ cup fresh cilantro, chopped
- Juice from ½ lemon
Directions
- In a bowl, mix together Cabbage, carrots, onion, cilantro, lemon juice and 1/2 cup hummus in a bowl. Set aside. Grill the halloumi in a skillet over a medium heat for 2–3 minutes each side until golden brown and crispy on the outside but soft on the inside.
- Warm the flatbreads in the oven and spread a generous amount of Baba Ghanouj all over the flatbread. Top with crunchy hummus salad and halloumi and enjoy!
