Pad Thai Noodle Cold Spring Rolls

Ingredients

  • 300g Summer Fresh Pad Thai Salad Bowl
  • 2 cups Nappa cabbage, sliced
  • 10 rice paper circles
  • 20 sprigs of coriander

Directions

  1. In a large bowl mix the Summer Fresh Pad Thai Salad and the nappa cabbage.
  2. Soak each piece of rice paper one at a time in cold water, and lay gently on towel to dry of excess water.
  3. Place a cup of noodle mixture and 2 sprigs of coriander on to a piece of rice paper, and roll. Repeat with remaining noodles and rice paper.
  4. Cut each roll in to 2″ pieces. Serve with Ponzu sauce or Soy sauce.

Makes about 18 – 24 pieces. Enjoy!
