Prosciutto-Wrapped Tzatziki Shrimp

Ingredients

1 x 227g (8 oz) Summer Fresh Tzatziki
6 slices Marcangelo Prosciutto
12 cooked shrimp, peeled and deveined
1 Tbsp Fresh basil leaves, chopped
½ Tsp Lemon zest
12 wooden skewers soaked in water at least 30 mins.

Directions

1. In a medium bowl, toss cooked shrimp in 1/2 Cup Summer Fresh Tzatziki, basil, and lemon zest until evenly coated.

2. Cut each piece of Marcangelo Prosciutto in half lengthwise. Lay the 12 slices of prosciutto on a lightly greased baking sheet.

3. Skewer shrimp starting from the thickest end. Place a skewered shrimp on to each of the prosciutto slices and roll tightly.

4. Broil the wrapped shrimp at 500°F (260°C) until opaque. Cook shrimp thoroughly to an internal temperature of 145°F (62.7°C) and until the prosciutto is crisp (approximately 4-6 minutes).
