Shrimp Avocado Corn Chip Bites

Ingredients

227g Summer Fresh Avocado Hummus
24 pieces of tri-color corn tortilla chips
24 pieces of cocktail shrimp, clean & deveined
2 tbsp Cajun spice
2 tbsp lime juice
1 tbsp olive oil
1 jalapeño, diced for garnish
1 cup of cilantro, diced for garnish

Directions

1.Place shrimp in a bowl and season with Cajun spice.

2.Preheat a skillet with olive oil and sauté shrimp on medium to high heat for 3-4 minutes. Stir often for even cooking. Remove from heat and finish shrimp with half of the lime juice.

3.Lay tortilla chips on cutting board. Spoon Summer Fresh Avocado Hummus on each tortilla chip.

4.Top with cooked shrimp and garnish with diced jalapeño, cilantro, and 1/4 tsp of lime juice
