Ingredients
CAULIFLOWER SLIDER
- 1 x 227g (8 oz) Summer Fresh Spicy Buffalo Hummus
- 1 Head of cauliflower, trimmed, florets cut into bite-size pieces
- 1/4 Cup Water
- 1 Breadcrumbs
- 1/2 Cup Hot Sauce
- Salt & pepper to Taste
COLESLAW
- 1 x 227g (8 oz) Summer Fresh Spicy Dill Pickle Dip
- 1/4 Head of cabbage, shredded
- 1/2 Cup carrots, shredded
- 1 Tbsp Fresh lime juice
- 1 Tbsp Water
Directions
- In a medium bowl, mix Summer Fresh Original Hummus with 1 Tbsp of hot sauce, and salt and pepper to taste. Add water and whisk together until the batter is thick and able to coat the cauliflower without dripping.
- Toss florets in hummus mix until evenly coated. Transfer to a medium bowl of bread crumbs and toss until well coated.
- Bake florets on a baking sheet at 450°F (230°C) for 10 minutes until golden brown. Remove from oven and toss with remaining hot sauce, then return to oven and bake for another 4 minutes.
- In a small bowl. combine 1/2 cup of Summer Fresh Roasted Red Pepper Dip, lime juice and water until smooth. In a medium bowl, mix cabbage, carrots, and parsley, then toss the dressing with the vegetables.
Serve on mini buns topped with coleslaw. Use small skewers to hold sliders together.
