Spicy Buffalo Cauliflower Sliders

Ingredients

CAULIFLOWER SLIDER

  • 1 x 227g (8 oz) Summer Fresh Spicy Buffalo Hummus
  • 1 Head of cauliflower, trimmed, florets cut into bite-size pieces
  • 1/4 Cup Water
  • 1 Breadcrumbs
  • 1/2 Cup Hot Sauce
  • Salt & pepper to Taste

COLESLAW

  • 1 x 227g (8 oz) Summer Fresh Spicy Dill Pickle Dip
  • 1/4 Head of cabbage, shredded
  • 1/2 Cup carrots, shredded
  • 1 Tbsp Fresh lime juice
  • 1 Tbsp Water

Directions

  1. In a medium bowl, mix Summer Fresh Original Hummus with 1 Tbsp of hot sauce, and salt and pepper to taste. Add water and whisk together until the batter is thick and able to coat the cauliflower without dripping.
  2. Toss florets in hummus mix until evenly coated. Transfer to a medium bowl of bread crumbs and toss until well coated.
  3. Bake florets on a baking sheet at 450°F (230°C) for 10 minutes until golden brown. Remove from oven and toss with remaining hot sauce, then return to oven and bake for another 4 minutes.
  4. In a small bowl. combine 1/2 cup of Summer Fresh Roasted Red Pepper Dip, lime juice and water until smooth. In a medium bowl, mix cabbage, carrots, and parsley, then toss the dressing with the vegetables.

Serve on mini buns topped with coleslaw. Use small skewers to hold sliders together.
