Steak & Portobello Mushroom Salad

Ingredients

  • 800g Summer Fresh Couscous Salad
  • NEW* Summer Fresh Avocado Herb Goddess Dressing
  • 3 large portobello mushrooms
  • 8 ounce steak
  • 1 corn, sliced
  • 1 pint heirloom tomatoes, halved
  • 1 avocado, cubed
  • Handful cilantro- chopped
  • 1 cup arugula
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons soy sauce

Directions

  1. Preheat grill to medium-high heat . Mix olive oil, soy and balsamic in a bowl and brush onto portobello mushrooms
  2. Prepare to grill steaks, salt and pepper on both sides
  3. Place the portobello mushrooms (gills up), steak and corn on the grill. Cover and let all cook 5 minutes. Flip mushrooms and bast with mixture and remove steak (once cooked to preferred doneness,) corn and mushrooms once charred and place on cutting board.
  4. Thinly slice steak and portobello mushrooms and slice corn off the cob
  5. On a large platter, lay down  2 cups of Summer Fresh Couscous Salad, 1 cup arugula, grilled corn, cubed avocado, steak and portobello mushrooms, tomatoes, cilantro and drizzle with Summer Fresh Avocado Herb Goddess Dressing
